Apple Pie Cookie Skillet

Preheat your oven to 350F. In a 9” cast iron skillet, add your diced apples and 1/3 cup granulated sugar. Mix well and place in the oven for 15 minutes. In a large bowl, add all your cookie ingredients (1 & 1/2 cup all purpose flour, 1 1/2 tsp baking powder, 1/2 tsp cinnamon, 1/2 cup melted butter, 1/2 cup brown sugar, 1/2 cup granulated sugar, 1 egg, 1 tsp vanilla, 1/3 cup milk) and mix until a dough forms. Using a cookie scoop, scoop your dough into your pre-baked apples in the skillet. Place your apple pie cookie skillet in the oven on 350F for 35-40 minutes. Allow your cookie skillet to cool for 20 minutes. Top with vanilla ice cream and enjoy!

For the homemade caramel sauce: Start by adding 1 cup granulated sugar to a stainless steel pan and mixing on medium heat until it has completely dissolved and turned golden brown. Slowly add in 6 tbsp room temperature butter until it is completely combined. Then turn the heat to low and slowly pour in 1/2 cup warm heavy cream.
