Coffee cake cookies

Preheat your oven to 350F. In a large bowl, add your soft butter and sugar. Cream on medium speed for 3 minutes or until light in color. Add your egg and vanilla extract and mix on medium speed for 2 minutes. Once your wet ingredients are completely combined, add in your dry ingredients (flour, baking powder, cinnamon, salt). Mix on low speed until all dry bits are incorporated and your dough is formed.

For the Crumble: Add your flour, brown sugar, cinnamon and cold cubed butter to a bowl. Using your hands, mash your butter into your dry ingredients until a sand-like texture forms.

Using a 2tbsp cookie scoop, scoop your cookies onto a lined baking sheet. Using a 1 tsp measuring spoon, press small holes into your cookies. Add your crumble to each cookie.

Place your cookies in the oven to bake on 350F for 11-13 minutes. Allow them to cool slightly before icing.

For the Icing: Combine your powdered sugar and milk in a small bowl and mix. Ice the cooled cookies and enjoy!
