An easy and healthy meal prep loaded green bowl featuring air-fried carrots, steamed brussels sprouts, cooked quinoa, grilled chicken breast, avocado, and hummus, served over a bed of greens.
For the Air-fried carrots:
Preheat your air fryer to 400F. Cut carrots into 1-inch rounds. Coat them with avocado oil, salt, pepper, and nutritional yeast. Place the carrots in the air fryer for 20 minutes, making sure to flip them halfway through.
For the Steamed brussels sprouts:
Cut the brussels sprouts in half and place them into a pan with a little water. Put a lid on the pan and steam the brussels sprouts, ensuring there is always a small amount of water in the pan. This should take about 10 minutes. Once cooked throughout, add salt, pepper, sesame seeds, and poppy seeds.
To assemble the bowl:
Place a bed of greens in your bowl. Top with the cooked white quinoa, air-fried carrots, steamed brussels sprouts, and the grilled chicken breast. Add half an avocado. Top with hummus and serve.
