Currently, in my pjs, warm cup of coffee in hand wishing I was downing this nana bread☕️🤤. One thing quarantine has taught me, you can never have too many ripe bananas around the house🤷🏼‍♀️. I will definitely be whipping up a batch of these banana bread muffins later today👏🏼.

What you need

cinnamon

baking soda

1 tsp baking soda

vanilla extract

1 tsp vanilla extract

ripe banana

coconut sugar

½ cup coconut sugar

liquid honey

¼ cup liquid honey

gluten-free flour

1 ½ cup gluten-free flour

tapioca

¼ cup tapioca

creamy peanut butter

1 tbsp creamy peanut butter

egg

Instructions

Preheat oven to 350F. In a large bowl smash bananas and add in eggs. Once combined add in the rest of your wet ingredients (honey or maple syrup, peanut butter, vanilla). In a smaller bowl add dry ingredients together (gf flour, coconut sugar, tapioca, cinnamon, baking soda). Pour dry ingredients into wet. Place into muffin tin and cook on 350F for 20-25 minutes.
