Delicious and addictive donuts perfect for starting your Friday, made with coconut flour and topped with dark chocolate and coconut flakes. This recipe was perfected after a few attempts and is worth it!
Preheat oven to 350F. In a bowl, combine the dry ingredients: 1/3 cup coconut flour (or 3/4 cup if using other GF flour), 1 tsp baking powder, 1/3 cup coconut sugar, and 1 tsp cinnamon. In another bowl, combine the wet ingredients: 2 eggs (or flax eggs), 2 tbsp melted coconut oil, and 1 tsp vanilla extract. Combine the dry ingredients into the wet ingredients. If the mixture is too dry, add a splash of nondairy milk. Line a donut pan (e.g., @zulay_kitchen) with oil and place the batter into the pan. Bake in the preheated oven for 12-15 minutes. For the topping, melt 1/2 cup dark chocolate with 1 tbsp coconut oil. Once the donuts are cooked, dip them in the melted chocolate mixture and top with coconut flakes. Enjoy!
