Honey Chipotle Chicken Bowls

Start by marinating your chicken with chipotle in adobo, adobo sauce, cilantro, honey, olive oil, lime juice, garlic powder, cumin powder, salt, and pepper. Set it in the fridge; marinate for as long as possible, but if you’re on a time crunch, marinade for at least 30 minutes. In a bowl, add your diced avocado, jalapeños, and cooked corn. Mix well, then add in your cojita cheese, chopped cilantro, lime juice, salt, and pepper. Mix again and set to the side. Cook your chicken in a cast iron skillet on medium heat for 7 minutes each side, or until completely cooked through. Serve with rice and your avocado corn salsa and enjoy!
