Lasagna soup

In a large pot, start by cooking your ground beef until it is mostly cooked through. Add in your diced onion and minced garlic and allow to cook for 5 minutes. Once your ground beef is cooked and your onions are tender, add in your tomato paste and stir. Add in your crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, dried oregano, salt and pepper and stir to combine. While your soup comes to a boil, take your cottage cheese and blend it with a little water until it is completely smooth. Set to the side! Once your soup has come to a boil, add in your broken lasagna sheets. Let this cook for 10 minutes or until lasagna sheets are tender. Add in your blended cottage cheese and stir. You can serve your lasagna soup now or turn the temperature down to low and allow it to thicken up. Serve with ricotta, fresh basil and Parmesan cheese!
