Whoever said salads are boring has never had a real salad. Salads are one of my favorite things to have for dinner. They are so easy to make, require almost no time to put together, and allow for many amazing combinations.
First, prepare the sautéed corn: Put 2 stocks of corn in a pan with chopped mushrooms, 1 tablespoon of olive oil, salt, 1 jalapeño, and 1 garlic clove. Cook on medium heat for about 10 minutes. To assemble the salad, start with a bed of mixed organic greens. Add 1 hard boiled egg, 1 cup of cooked white quinoa, the sautéed corn mixture, 1/2 avocado, and feta cheese. Finish by topping with Tessemae's habanero ranch dressing.
