A delicious recipe for salted caramel brownies featuring chocolate chunks. The recipe includes instructions for making both the brownie batter and homemade salted caramel, with baking details and cooling suggestions.
Start by making your salted caramel. Add 1/2 cup granulated sugar to a stainless steel pan and heat on medium low until sugar completely dissolves, stirring constantly. This takes about 6 minutes. Add 1/4 cup unsalted butter and stir until your butter and sugar come together. Slowly add 1/3 cup heavy cream and mix until combined. Remove from heat and transfer to a bowl. Allow to cool at room temp for 30 minutes.
Preheat your oven to 350F.
In a medium bowl, add 1/2 cup melted butter and 1/2 cup granulated sugar. Mix together before adding 2 eggs and 1 tsp vanilla extract. Add 2/3 cup all purpose flour, 1/3 cup cocoa powder, 2 tsp instant espresso powder (optional), 1 tsp baking powder, and chocolate chips and mix to combine.
Line an 8x8 baking dish and place your brownie batter in the dish. Top with the cooled caramel and bake on 350F for 34-36 minutes.
Once your brownies have cooked, top with additional caramel and flakey salt. Allow to cool for 30 minutes before enjoying!
