Same Day Mini Sourdough Bagels

Start by combining your active sourdough starter and warm water. Whisk with a fork until combined. Use a stand mixer with a bread hook attachment. Add 4 cups of bread flour, 2 tbsp sugar, and 1 tsp salt to your active starter and water mixture. Mix on the lowest speed for 6-8 minutes. Transfer dough to a bowl and cover with plastic wrap, then let the dough rise for 6-8 hours until it has doubled in size. After it has doubled, take the dough out of the bowl and stretch it into a rectangle on a floured surface. Cut the dough into 8 even squares. Roll the squares into balls, making sure there are no seams. Poke a hole in the middle and roll it around your two pointer fingers to shape the bagel. Do this for each square and place them on parchment paper. Cover and let them rest for 30 minutes to 1 hour. Preheat your oven to 425F. Boil a large pot of water with 1 tbsp honey. After the bagels have rested for the last time, boil them for one minute on each side. Place the boiled bagels onto a lined baking tray and bake for 20-25 minutes. Enjoy!
