Spiced Eggnog Iced Cookies

Preheat your oven to 350F. In a large bowl or using a stand mixer, add your soft butter and mix until light in color. Then add your egg and vanilla extract, mix again before adding in your eggnog. Once all your wet ingredients are combined, add your dry ingredients (flour, baking soda, baking powder, cinnamon, salt) and mix until your dough forms. For the cinnamon sugar, combine 1/4 cup granulated sugar and 1 tsp cinnamon in a shallow dish. Using a 4 tablespoon cookie scoop, scoop your cookies, then roll them in your hand and again into your cinnamon sugar mixture. Repeat until all your cookie dough is used, then place your cookies on a lined baking sheet. Bake on 350F for 12 minutes. Once your cookies are completely cooled, frost them and enjoy!

Icing instructions: Add your butter to a stand mixer and whip on high speed for five minutes. Before adding in your confectioners sugar and eggnog, whip again on high speed for seven minutes until fluffy.
