Spinach Lavash Flatbread with Pesto
15 mins prepServes 2
Just tried Atoria’s Family Bakery's brand new Spinach Lavash flatbread and turned it into this easy, pesto-loaded flatbread, grilled to crispy perfection. It's a new summer obsession, made with real, simple ingredients.
To make the pesto: Combine pine nuts, fresh basil leaves, 1/4 cup Parmesan, garlic cloves, juiced lemon, olive oil, salt, and pepper in a food processor and blend until smooth.
To assemble the flatbread: Start by placing your Atoria’s Family Bakery Spinach Lavash flatbread on a baking sheet or tray. Add a layer of your prepared pesto, then arrange sliced heirloom tomato, fresh mozzarella, and a sprinkle of Parmesan cheese on top. Place in the oven or on a grill until your cheese is melted and your flatbread is crispy. This typically takes about 5 minutes. Remove from the heat and top with flaky salt and fresh basil before serving.
