STRAWBERRY CRUMBLE BARS

Start by preheating your oven to 350F. In a bowl, mix together your soft coconut oil and honey, then add in your dry ingredients (AP flour or GF 1-1 flour and rolled oats). Mix with your hands until a crumble forms, then add 3/4 of your mixture to an 8 x 8 baking dish. Bake on 350F for 10 minutes. While the crumble bakes, start your strawberry filling by adding your strawberries, lemon juice, and maple syrup to a pot and cooking it on medium heat for 10 minutes, stirring every two minutes. Once the 10 minutes is up, add in your cornstarch and mix on low heat for an additional two minutes. Place your strawberry filling on top of the baked crumble base, then top with the last 1/4 of your crumble mixture. Bake on 350F for 22 minutes. Wait 15 minutes to cool then enjoy!
