White Chicken Chili

Start by heating a large pot with olive oil. Add in your diced onion and cook for five minutes before adding in your chicken and seasonings. Cook for five minutes before adding in your chicken broth, salsa Verde, white beans, and your green chilies. Allow this to come to a boil before turning the heat down to low. Let this cook for 20 minutes or until your chicken is completely cooked through. Once your chicken is cooked, remove it and shred it then add it back in. Using a large blender, blend your cottage cheese and Greek yogurt until smooth then add in 1/4 cup of your hot chicken broth and mix together. Add your cottage cheese mixture to your white chicken chili along with your spinach and stir to combine. Enjoy!
